Cipolla di Suasa-Onion of Suasa
This is a typical product cultivated exclusively in the area of Castelleone di Suasa and San Lorenzo in Campo.
Since 1999, was started a program of rediscovery and exploitation of this particular onion, thanks to the Province of Ancona and the Agency "per i servizi agroalimentari" of Marche (ASSAM).
The Onion of Suasa has a sweet taste, with a bulb having pinkish tunics and the outer leaves are golden red. In Castelleone were developed several recipes to taste the onion: from traditional fried bittersweet and au gratin onions, to the more unusual uses such as jam, liquor "Cipollino" and ... ice cream, strictly based on onions.
